Morning Scramble

1. Spray pan with cooking spray. 2. Grate 1/2 cup sweet potato in the pan. 3. Add 1/2 to 1 cup of frozen spinach (fresh is even better, but not always available in our fridge) 4. Add diced onion and green pepper. I like to keep a container of diced red onion and pepper already prepared in the fridge for quick access in the early hours. 5. Scramble till veggies are soft then add 1 egg to the pan and cook through. 6. Salt and pepper to your taste. 7. Serve! I often top this with a tbsp of grated mozzarella cheese. Very filling, fairly low in calories and yummy! 280 calories, 6 grams of fiber
